If you have a crowd gathering over the 4th, it's the perfect time to make deviled eggs. My grandmother loved them and instructed me in what she thought were the perfect proportions to make them creamy, with a little tang and a tad of zing. You can make them ahead, they truly are easy and my, oh, my are they tasty.
Deviled Eggs
(Makes 12 half egg servings)
6 hard-cooked eggs, peeled and halved - lengthwise
1/4 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon dijon mustard (or 1/4 teaspoon powdered mustard)
1 teaspoon Worcestershire sauce
1/8 teaspoon salt (maybe even less)
Pinch white pepper

- Hard boil the eggs, then peel, halve and remove yolks to a bowl.
- Mash yolks well with a fork, mix in the remaining ingredients.
- Mound yolk mixture into the hollow of the cooked whites.
- Chill 1 half hour.
- Garnish as you like, with paprika, chopped chives, chopped parsley, etc.
- Serve
These are great for a crowd and if you, like Peter and I, limit your consumption of eggs because of cholesterol ... well this is a special occasion! Have one ... it's only half an egg!

Our friends in London hold an annual July 4th party in honor of their 12-year stay in America. I brought deep dish blueberry pie, and tortollini salad (made with cheese tortollini, sun-dried tomato, broccoli florets and a garlicky dressing). Both were considered very "American" by the party guests who devoured every bite.

Why is it that grandmothers always know the best food?! I, too, enjoyed my grandmother's deviled eggs -- to the point that my dad (her son) would oftentimes get annoyed with me when she made them. Probably because I ate his share.

Thanks Claudia, someetimes I just simply forget about the incredible edible egg. Easy to prepare and as you say, great for gatherings...
