It's finally Spring (and in fact almost summer but let's not be so literal) and Spring to me means fresh LOCAL asparagus and in my estimation this simply opens the season on nothing but fresh local produce from now until November. I can't tell you the smile that puts on my face. To be freed from the winter doldrums of root vegetables and starches to the bright, light flavors and colors of Spring and Summer vegetables, well ... my heart sings and so does my palate. And it all begins for me with asparagus.
My favorite farmstands pick the asparagus every morning and I anxiously await their opening for that day's crop. Long thin green stalks with tight green/purple tips and very little wood at the base. They are a "thing of beauty" as my father used to say, quoting John Keats as he did from time to time.
